Чеснок и продукты его переработки, перспективы использования

Аннотация

Актуальность. Чеснок одна из наиболее востребованных сельскохозяйственных культур, отличающаяся высокой пищевой ценностью и уникальным химическим составом, обеспечивающим эффективную защиту организма человека от лидирующих заболеваний века: кардиологических заболеваний и рака.

Материалы и методы. Обзор охватывает наиболее значимые исследования биохимического состава, применения в медицине, питании и растениеводстве чеснока и продуктов его переработки за период с 1988 по 2024 годы на базе работ, опубликованных преимущественно в изданиях Scopus и WoS.

Результаты. Широкий ассортимент продуктов переработки чеснока (свежий, порошок, «зеленый» чеснок, чеснок Laba, мацерат чесночного масла, спиртовой экстракт (‘aged garlic extract' AGE) и черный чеснок) определяет многообразие биохимического состава и направленности биологического действия. Возможность применения как чеснока, так и листьев, стрелок и внешних чешуй в медицине и растениеводстве (для повышения урожая и устойчивости растений к биотическим и абиотическим стрессам) составляет уникальность этой культуры и возможность осуществления безотходного производства.
