Качество продуктов питания, производимых в России, и поставляемых в торговые сети для массового потребления, в настоящее время является одним из важнейших приоритетов пищевой безопасности. Материал и методы. В статье приведены результаты исследований содержания нитратов в продуктах переработки фруктов и овощей за 2018-2019 года, полученные в Испытательном центре ВНИИТеК. Всего было изучено 252 образца, за период с января 2018 по апрель 2019 года включительно. Содержание нитратов определяли методом жидкостной хроматографии. Для используемого метода проведена дополнительная верификация с целью оценки пригодности, предела обнаружения, предела количественного определения и линейности. Полученные результаты сравнивались с допустимым уровнем ПДК нитратов, которые установлены в ТР ТС 021/2011. Результаты. Показано, что содержание нитрат-ионов в плодовоовощной продукции колеблется в широком диапазоне, в зависимости от выбранной группы. Для кабачковой икры и томатного соуса в сумме нарушения составили до 60% от общего числа исследований, наиболее низкий уровень нитратов установлен в детских фруктовых пюре.</p></abstract><trans-abstract xml:lang="en"><sec><title>Relevance</title><p>Relevance. The quality of food products in Russia and delivered to retail chains for mass consumption is currently one of the most important food safety priorities.</p></sec><sec><title>Methods</title><p>Methods. The article contains the results of studies of nitrate content in fruit and vegetable products during 2018-2019 period, obtained from VNIITeK laboratory, comparisons were made with the permissible level of Maximum residue levels (MRL) for nitrate, which are set in Technical regulation TR TS 021/2011. Totally, 252 samples were studied, for the period from January 2018 to April 2018 inclusive 2019.</p></sec><sec><title>Results</title><p>Results. The nitrate content was determined by liquid chromatography.
