Среди известных методов идентификации и установления содержания каротиноидов тонкослойная хроматография занимает важное место, как быстрый, недорогой и доступный метод анализа. В работе представлены данные оценки содержания индивидуальных каротиноидов красных плодов Solanum lycopersicum на основе использования известных эмпирических формул и с применением тонкослойной хроматографии на бумаге. Показано, что использование эмпирических формул для определения содержания в красных плодах ликопина и β-каротина характеризуются большим разбросом показателей содержания βкаротина и заниженными данными общего содержания каротиноидов. Разработанные условия хроматографического разделения и идентификации выделенных каротиноидов основаны на разной полярности исследуемых каротиноидов и специфических спектрах поглощения индивидуальных пигментов. Метод тонкослойной хроматографии может служить быстрым эффективным способом оценки качества плодов томата любой окраски и установления содержания в плодах βкаротина, ζ-каротина, нейроспорина, ликопина и лютеина.</p></abstract><trans-abstract xml:lang="en"><p>Qualitative and quantitative evaluation of tomatoes carote-noid composition is considered to be the basis of tomato selection. Among known methods of identification and carotenoid content determination thing layer chromatography (TLC) is characterized by inexpensive, quick and availab-le method of analysis. Comparison of individual tomato carotenoid content data obtained using wellknown empirical formulas and based of TLC separation on chromatoraphic paper was achieved. Empirical formulas for the determination of lycopene and beta-carotene concentrations were shown to give high variations in beta-carotene content and decreased values of total carotenoids concentration values. Developed conditions of chromatographic separation and identification of selected carotenoids are based on different polarity of individual pigments and specific absorption spectra of the latter.
