Мало распространенный в России представитель семейства Apiaceae садовый кервель широко используется за рубежом в питании и высоко ценится в народной и традиционной медицине.</p></sec><sec><title>Материал и методика</title><p>Материал и методика. Проведена оценка пищевой ценности садового и дикого кервеля (лесного купыря) Средней полосы России по показателям накопления аскорбиновой кислоты, полифенолов, флавоноидов, нитратов, содержания водорастворимых соединений и уровня антиоксидантной активности спиртовых экстрактов растений.</p></sec><sec><title>Результаты</title><p>Результаты. Показано, что наземная часть садового кервеля содержит более низкие концентрации витамина С, полифенолов, флавоноидов, сухого вещества и общей антиоксидантной активности по сравнению с лесным купырем (в 1.6-1.8, 2.2-2.5, 1.8-2.2 и 1-1.54 раза соответственно), однако значительно богаче, чем купырь лесной, по содержанию водорастворимых соединений. Лесной купырь характеризовался в 2.4-4.9 раза более высоким содержанием сухого вещества в листьях и стеблях, что обуславливает непригодность стеблей дикого кервеля для использования в питании несмотря на большую массу надземной части растения по сравнению с садовым кервелем. Отличительной особенностью садового кервеля было значительное накопление каротина и существенно более низкое содержание хлорофилла b в листьях. Уровни полифенолов и общей антиоксидантной активности семян садового кервеля также были ниже, чем в семенах лесного купыря. Высокие урожайность и показатели пищевой ценности садового кервеля свидетельствуют о перспективности выращивания растения в промышленном масштабе и целесообразности использования купыря лесного в селекционном процессе.</p></sec></abstract><trans-abstract xml:lang="en"><sec><title>Relevance</title><p>Relevance. A rare representative of the Apiaceae family the garden chervil is widely used abroad in nutrition and in folk and traditional medicine.</p></sec><sec><title>Methods</title><p>Methods. Evaluation of nutritional potential of Anthriscus cerefolium (L.) Hoffm and Anthriscus sylvestris Hoffm grown in Moscow region is achieved using the parameters of ascorbic acid, polyphenols, flavonoids, total antioxidant activity of ethanolic extracts.</p></sec><sec><title>Results</title><p>Results. Garden chervil (Anthriscus cerefolium) was characterized by lower concentrations of ascorbic acid (1.6-1.8 times), phenolics (2.2-2.5 times), flavonoids (1.8-2.2 times), total antioxidant activity (1-1.54 times) and dry matter content (2.4-4.9 times) than wild chervil (Anthriscus sylvestris) but demonstrated significantly higher levels of total dissolved solids. Significantly higher content of dry matter in leaves and especially stems of wild chervil correlates with low nutritional value of stems despite large total mass of plants compared to garden chervil. Contrary to wild chervil, Anthriscus cerefolium recorded unusually high concentrations of carotene in leaves and significantly lower levels of chlorophyll b. Seeds of garden chervil were also characterized by low antioxidant status contrary to wild chervil and seeds of curly parsley.
